It’s that time again! Presto Pasta Nights Roundup #160!

Debbi from Debbi Does Dinner shares a Taco Pasta this week with a secret ingredient – beer! It looks absolutely fantastic and beer can only make pasta taste better!

Nuria from Recipes Pic by Pic makes the quick, easiest and “most deliciousnest” Cold Spaguetti and Avocado Salad. This looks like the perfect recipe for those hot summer days!

Helen from Fuss Free Flavours was craving greens and was inspired to make this incredibly healthy yet utterly delicious Five Greens Pasta. We could all take a cue from Helen and eat something this good for us!

Pam of Sidewalk Shoes brings us a Donna Hay recipe - Ginger Beef Patties with Lime Noodle Salad. Doesn’t this sound so mouthwatering? I know this will definitely be on my dinner list coming up!

One of my favourite bloggers, Kevin of Closet Cooking brings us a Salsa Verde Lasagna with a tomatillo salsa verde. Kevin says it’s the easiest lasagna he’s ever made but one that still tastes great. It’s got my vote!

Deb of Kahakai Kitchen raves about Mark Bittman’s Pasta with Bacon and Breadcrumbs. The use of breadcrumbs is interesting and you can never go wrong with adding bacon to a dish!

Kait from Pots and Plots is not serving Your Kids Mac and Cheese ; instead it’s a much richer, luxe version with vegetables and sausages. I bet no one would want to share a dish this delicious with their husbands or their kids!

Ching of Little Corner of Mine outdoes herself in this Stir Fried Tang Hoon (Glass Noodle) with Ground Pork by adding her secret ingredient – minced anchovies! The addition of chives adds a boost to your immunity system and the eggs bring together the overall flavor!

Kirsten of From Kirsten’s Kitchen to Yours focused on asparagus and made a delicious looking Fusili with roasted spring vegetables. This looks like a great dish for spring!

Beverly of Cooking Cleverly with Beverly made The Easiest Healthy Pasta Dinner that she knows made with zucchini, pesto and ricotta. At only 235 calories a serving, have several or have a big piece of dessert after dinner!

Vallih of More Than Burnt Toast makes the last comfort food dish before BBQ season hits - Spaghetti with Meatloaf and Roasted Tomatoes . This definitely looks like the perfect dish to end winter and welcome spring!

Katie from Thyme for Cooking shares her first experience eating smoked salmon and shares a lovely Pasta with Smoked Salmon. Good thing she now loves smoked salmon or else we would have missed such a tasty looking dish!

Marija of Palachinka makes a Spicy Arrabbiata Penne with cherry tomatoes, tomato puree and fresh parsley. With my love for all things spicy, I know this would be so good!

Ben from What’s Cooking loves lasagna and makes another take on this classic dish - Poblano Lasagna Rolls. Not only is it easier than lasagna but it is stuffed with delicious sausage, ricotta and poblano peppers!

Theresa of Food Hunter’s Guide makes the second best Pasta Carbonara she’s ever had. The egg yolk might be strange to some but I definitely agree with her that there’s nothing quite so delicious as creamy yolk mixed with creamy pasta and crunchy bacon!

Claudia from Honey From Rock is involved in a weekly challenge to use up all the greens before new ones arrive and has created a Kale and Beet Greens Pesto. I love pesto and making new combinations so this is definitely something I would try!

Cool of Pan Gravy Kadai Curry made an Eggplant Timbale with Pepper, Mushrooms and Ziti that looks amazing! I actually bookmarked the exact same recipe a few months ago and seeing this great dish has reminded me that I must make this soon!

Chaya from Chaya’s Comfy Cook made a delicious looking Noodle Salad with Peanut Lime Vinaigrette that is a snap to put together but is packed with umami flavours! Chaya is also sweet enough to have a giveaway to Canadian and US readers so be sure to enter for your chance to win!

And finally, my contribution to PPN this week – Spicy Coconut Noodles. Rice noodles are mixed with a slightly spicy coconutty tomato sauce and dotted with shrimp, chicken, green beans and bean sprouts. This recipe is laughably easy but sinfully delicious!

Spicy Coconut Noodles adapted from Real Simple

Ingredients
1 can coconut milk
1/2 can tomato paste
1 tablespoon chili powder
1 tablespoon sriracha chili garlic paste
1 cup shrimp, shelled and deveined
1/2 cup roughly chopped skinless boneless chicken thighs
1 cup green beans, cut into 1″ sections
1 cup bean sprouts, washed and drained
1/2 package rice noodles

Directions
1. Bring a pot of water to boil and add noodles. Cook until noodles are cooked but still slightly chewy. Drain.
2. Place coconut milk, tomato paste, chili powder and sriracha in a pan and bring to a boil. Add chicken and cook for 3 minutes until chicken is almost cooked through. Add shrimp, green beans and bean sprouts and stir to mix thoroughly.
3. Cover and cook for 5 minutes until green beans are tender and shrimp is cooked through.
4. Add drained noodles to pan and stir to mix noodles with the chicken, shrimp and coconut sauce. Serve hot.
